Fine Olive Oil
Sublime, Bella Tù, Riserva, MagnificoFine Oil is made in the olive grove, which must ensure healthy, well-grown olives, rich in polyphenols. Monti Oil is obtained solely from the pressing of olives harvested on the Estate. The particular fragrance of each of our oils is obtained from a precise degree of ripeness. We carry out three harvests between November and December, each dedicated to a specific oil. They coincide with the beginning, middle and advanced level of veraison of the fruit.
Method
Olio Monti is a limited production of excellence. We milling our olives strictly within six hours of harvesting, to prevent natural degradation processes of fruit.
Extraction takes place cold and the Oil obtained is not subjected to forced filtration processes with high pressures. It decants naturally in cool airtight stainless steel tanks and after two months of rest is bottled. This keeps intact the content of vitamins and polyphenols, the oil’s natural antioxidants. Any deposits at the bottom of the bottle are an indication of the product’s genuineness.
Tips
For storage, keep the bottle away from light and heat sources. The bottle should preferably be consumed within 20 days of opening to fully enjoy all the antioxidant principles present. Contact with air starts a natural process of oxidation of the juice.
Aged wine vinegar
Nonna Marchigiana’s Vinegar House we have always lovingly kept in our cellar. A Family treasure that we have the pleasure of sharing.
Sourdought Vinegar is 40 years old and is contained in the first barrel of the 3 batteries of 5 barrique. Each year we tap the vinegar from the last barrique and produce only 200 numbered 25cl bottles. The last barrique is tamped down with vinegar from the barrique upstream and so on backwards. The first larger barrel, is supplemented with Merlot Wine from our vineyard.

Marakas, Marco Aurelio and Senatore Cappelli varieties.
Minimum order 30 Ton.
We have a desire to produce pasta with the Senatore Cappelli variety and are selecting the artisanal pasta maker to whom we will entrust the processing.
